Q: Diabetic Recipes?
Ok, my dad is diabetic. I want to do cook something AMAZING for him, something hes never had before, and obviously something he can eat without making him sick. Are there any suggestions out there from diabetics or family members who cook for diabetics?
A: I used to make this for my dad – he LOVED them (make a second batch – they can be frozen) – so did the whole neighbourhood because they smell AWESOME while they’re baking!!
Pina Colada Squares
Yield: 30 servings
1cupflour, all-purpose
1teaspoonbaking powder
1/4teaspoonsalt
1/4cupbutter, or margarine
1egg, separated
1/4cupmilk, 2% (or 1% or skim)
1canpineapple, canned, crushed, 14 ounce, unsweetened
2tablespoonscornstarch
2teaspoonsrum extract
1teaspoonvanilla extract
1/4teaspooncream of tartar
1tablespoonsugar, white
1cupunsweetened dessicated coconut
Directions:
bottom layer:
combine flour, baking powder and salt.
cut in butter or margarine until mixture is crumbly.
beat egg yolk and milk together with a fork.
stir into crumbs.
press evenly onto bottom of a lightly greased 8 inch pan (square).
middle layer:
combine crushed pineapple and its juice and cornstarch in a
saucepan.
mix well.
stir-cook over medium heat until mixture boils and thickens.
stir in rum extract and vanilla.
pour over first layer.
top layer:
beat egg white and cream of tartar until foamy.
add sugar and beat until soft peaks form.
fold in coconut. spread evenly and carefully over pineapple
layer.
press down lightly with a fork.
bake in a 180c (350f) oven for 30 minutes until top is golden
brown.
cool and cut into squares.
makes 30 squares – 3 * 4 cm (1 1/4 * 1 1/2 inches)
Q: Diabetic recipes?
I have gestational diabeties. I’m doing real good on my sugar levels, unless I have any sugar or carbs period! I’m getting really tired of just meat and salads. Does anybody have any ideas?
A: That’s a hard one! No, not really. I hate eating just meat and salad but man does it keep the weight down!!!

I would like to get any diabetic recipes you might have nothing for like meals for muffins cookies bread or snacks. I have a young brother that would love so different things to eat. Also i would like a diabetic recipe for the bread maker if anyone has one

A: Here are a few recipes taken from a Diabetic Cookbook of mine.
“Blueberry Muffins”
1-1/3 c. all-purpose flour
1c.quick-cooking oats,uncooked
1/4c. Splenda brown sugar substitute
2 tsp. baking powder
1/2 tsp. ground cinnamon
1/4 tsp. salt
1 c. skim milk or 1%milk
2 large egg whites
3TBsp. canola or vegetable oil
1c. fresh or frozen blueberries, thawed,drain
non-stick cooking spray
1.Preheat oven to 425* Coat a regular size muffin pan with cooking spray.
2.Mix all ingredients together in a medium bowl,stir
gently just until blended.Don’t overmix.Muffins will be tough.Gently fold in blueberries.”Will be Lumpy
3.Spoon batter into muffin pan,filling each cup about 3/4 full. Bake for 25 mins. or until golden.
Makes 1 dozen.

“Double Chocolate Brownies”
6 TBsp.margarine,(stick)softened
1/2 c. Unsweetened applesauce
2 large eggs
1 tsp. vanilla extract
3/4 c. all-purpose flour
1 c. Splenda Blend
1/2 c. semisweet chocolate chips OR mini
chocolate chips
6 TBsp.Unsweetened cocoa powder
1tsp. baking powder
1/4 tsp. salt
1.Preheat oven to 350* & coat a 8×8-inch baking pan with cooking spray.
2.In a large mixing bowl beat margarine applesauce eggs & vanilla until well blended.
3.Now,stir in flour,Splenda,chocolate chips,cocoa
baking powder & salt until blended.
4.Spread batter in baking pan.Bake for 18-20 min
or until top springs back when gently touched. Cool completey. Cut into 16 squares. store in air
tight container at room temperature.Makes 16 Brownies. 1 Brownie =105 Calories

1/2 c. Light margarine(stick)

2 large egg whites
4 tsp regular Splenda
1 -1/4 tsp. vanilla extract
1/3 c. mini semisweet chocolate chips
1.Preheat oven to 375* & spray a cookie sheet with non-stick cooking spray.
2.In a medium bowl,combine the oats,flour,baking powder, & salt; set aside.
3.In a large bowl,mix the margarine,Splenda brown sugar substitute,regularSplenda,egg whites
and vanilla extract with a electric mixer.Stir in the dry ingredients until well blended. then add the chocolate chips.
4.Drop the dough by rounded teaspoonfuls onto cookie sheet. Bake for 8-10 mins. or until lightly browned. Cool on a wire rack.
Makes 3 dozen cookies
1Serving size= 2 cookies & 100 Calories

I usually make goodies baskets for everyone at Christmas. My Step-mom just found out she is diabetic. I still want to give them a basket, but I don’t have any appropriate recipes. Any ideas? I usually make several cookies and candies.

A: Having had diabetes myself for over forty years, I have found that there really aren’t “diabetic” receipes. Diabetics eat the same food as anyone else, its only that the portions have to be managed. A balanced diet of carbs, proteins, vegs and fruits (The same that is recommended for everyone.) I think you will find that your guest will be happy if you just prepare your normal fare. We can even eat a small serving of regular dessert occaisionly. Hope this helps.

I just got my pancake puff pan, and want to make little cupcake balls with frosting in them. My step dad is diabetic, so I need recipes. I know I could get these online, but I am looking for preferences and recommendations.

A: You can substitute Splenda for equal amounts of sugar in any recipe. Look for Splenda for baking in the baking aisle. They even have a brown sugar version.

INGREDIENTS
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
1 1/2 cups unsweetened applesauce
3/4 cup brown sugar twin
2 eggs
1 teaspoon vanilla extract
1/2 cup raisins
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Spray an 8×4 inch loaf pan with cooking spray.
Sift together flour, baking powder, baking soda, cinnamon, nutmeg and salt. Set aside.
Beat the eggs until light and add sugar twin. Add applesauce and vanilla.
Add flour mixture and beat until smooth. Fold in raisins.
Pour batter into loaf pan. Bake at 350 degrees F (175 degrees C) for about an hour, or until a toothpick inserted into cake comes out clean.

A: Stuffed Turkey Tenderloin
Yield: 2 tenderloins (4 servings
Ingredients
2 small turkey tenderloins (about 1/2 pound each)
1/4 teaspoon salt
1/8 teaspoon freshly ground pepper
1 cup chopped onion
2 cloves garlic, minced
One 4-ounce can chopped green chilies, or 1/2 cup mild giardiniera pepper-vegetable mixture, drained
1/2 cup coarsely chopped cilantro
1 tablespoon olive oil
Directions
Prepare a charcoal grill or preheat the broiler.
Cut a pocket horizontally along the side of each tenderloin, making sure not to cut all the way through. Season with salt and pepper.
Spray a medium skillet with non-stick pan spray. Saute the onion and garlic until softened, about 3 minutes. Stir in the green chilies and cilantro.
Stuff the onion mixture into the pockets in the tenderloins; secure with small metal skewers or wooden toothpicks. Brush the tenderloins lightly with oil.
Grill, covered, over medium-hot coals, or boil 6 inches from the heat source, about 8 to 10 minutes per side or until the tenderloins are cooked through. Cut on the diagonal into 1/2-inch slices.

A: baked chicken. grilled steak. poached salmon. any type of egg. All those are good recipes for diabetics because there is no carbohydrates. Anything with a low carb count is fine for a person with diabetes.

A: There are several diabetic cookbooks available, and many regular recipes can be adapted for diabetics. The American Diabetes Association website has good information on available cookbooks. You might also try looking on line with “diabetic recipes”. (Most public libraries have several excellent cookbooks available.)

A: Apple Crisp
2 cups sliced apples
¾ cup orange juice
1 tablespoon Splenda
1 teaspoon cinnamon
1 teaspoon lemon juice
1 cup graham cracker crumbs
2 tablespoons butter, melted
Preheat oven to 400 degrees. Prepare 1 quart casserole with non stick spray.
Place apples into casserole dish. Combine orange juice, Splenda, cinnamon and lemon juice. Pour over apples and toss. Combine graham cracker crumb with melted butter, sprinkle over apples. Cover with foil and bake for 25 minutes. Remove foil and bake additional 5 – 10 minutes.
Banana Cookies
3 ripe bananas
2 cups oatmeal
1 cup dates, pitted and chopped
⅓ cup oil
1 teaspoon vanilla
In large bowl, mash the bananas. Stir in oats, dates, oil and vanilla. Mix well, allow to sit for about 15 minutes.
Preheat oven to 350 degrees. Drop cookies by teaspoonfuls onto ungreased baking sheet. Bake for 20 minutes or until lightly browned. Remove to rack to cool.
Best Crockpot Beef Stew
2 pounds stew meat, cubed
¼ cup flour
1 ½ teaspoons salt
pepper
1 ½ cups beef broth
1 teaspoon Worcestershire sauce
1 clove garlic
1 bay leaf
1 teaspoon paprika
4 carrot, sliced
3 potatoes, cubed
2 onion, chopped
Place meat in crockpot. Mix flour with seasoning and sprinkle over meat, stir to coat all pieces. Add remaining ingredients and stir well. Cover and cook on low for 10-12 hours.
Broccoli Chowder
2 pounds broccoli
3 cups milk
2 teaspoons salt
1 cup half and half
¼ cup butter
2 cans chicken broth
1 cup sliced cooked ham, chopped
⅓ teaspoon black pepper
2 cups Swiss cheese, shredded
Clean broccoli, pull apart. Cut stems and put in bottom of dutch oven with remaining broccoli on top using 1 can of chicken broth. Cook until broccoli is crisp tender — about 7 minutes. Remove broccoli and coarsely chop. Add remaining broth, milk, ham, salt and pepper to pot. Bring to boil over medium heat, stirring occasionally. Stir in broccoli, add cheese slowly allowing to melt after each addition. Add butter and half and half. Cook over low heat until heated through. DO NOT BOIL.
Note: this recipe does not allow for substitutions. Any type of cooked ham can be used, however, Danola ham or equivalent is excellent.
Carrot Cabbage Slaw
½ head cabbage, shredded
1 onion, finely chopped
2 stalks celery, finely chopped
2 carrots, shredded
1 tablespoon mayonnaise
2 tablespoons splenda
½ teaspoon pepper
2 tablespoons vinegar
2 tablespoons lemon juice
In large bowl, combine cabbage, carrots, onion and celery.
In smaller bowl, mix together splenda, pepper, vinegar, lemon juice and mayonnaise. Pour over shredded vegetables. Mix well and chill several hours before serving
Chicken Piccata
4 chicken breasts, boneless skinless
3 tablespoons olive oil
3 cloves garlic, minced
1 large shallot, minced
1 cup chicken broth
¼ cup dry white wine
1 tablespoon lemon juice
Heat oil in skillet, brown chicken, remove from pan. Sautee garlic and shallot, add chicken back to skillet. Add wine, simmer for 3 minutes to burn off alcohol, add broth and lemon juice. Simmer until sauce is reduced and thickened. Can also be prepared with veal instead of chicken.
Crispy Potato Skins
4 russet potatoes, scrubbed clean and trimmed
butter flavored cooking spray
2 tablespoons chopped chives
salt and pepper
Preheat oven to 375 degrees. Pierce potatoes, place in oven and bake until skins are crisp, about one hour. Remove from oven and let cool about 10 minutes.
Carefully cut the potatoes in half and scoop out pulp leaving about 1/8″ attached to skin. Save pulp for later use. Spray inside of skins with butter flavored spray and season with salt, pepper and chives.
Place halves on baking sheet and return to oven for 5 – 10 minutes.
Easy Zucchini and Squash
2 – 3 zucchini, scrubbed and trimmed
2 – 3 squash, scrubbed and trimmed
olive oil
salt and pepper
Cut each zucchini and squash lengthwise. Drizzle olive oil on bottom of large platter, place vegetables cut side down in oil. Let marinate at least 20 minutes. Turn over and season with salt and pepper.
Heat large skillet over medium high heat, drizzle with olive oil. Placed vegetables in skillet. Cook about 5 minutes each side.
Can also be prepared on the grill — even better!
Sweet Carrots
½ cup water
¼ teaspoon salt
2 cups carrots, shredded
1 teaspoon butter
2 tablespoons splenda to taste
1 teaspoon lemon juice
In a small saucepan, bring water to a boil. Add the salt and carrots. Cover and cook until water is evaporated, about 5 minutes. Remove from heat, stir in butter, splenda and lemon juice. Serve immediately
Spaghetti Squash
1 spaghetti squash, halved and seeded
1 tablespoon olive oil
½ cup onion, minced
2 green onion, minced
3 cloves garlic, minced
12 ounces ground turkey
2 cups crushed tomatoes
2 tablespoons red wine
2 teaspoons fresh oregano, minced
¼ teaspoon ground cayenne pepper
2 tablespoons fresh parsley, chopped

My boyfriend has founf out he is a diabetic, and his birthday is coming up soon. I would like to make him a cake but want something that isnt too gross like the flaxseed muffins. Anyone have any good recipes or tips?
A: You can use any recipes you want for the cake, just make sure it doesnt have any fruit juice added to it (or a very small amount) or any powered sugar. Any regular sugar can be replaced by Splenda (or another sugar substitute) and any brown sugar can be replaced with Splnda Brown Sugar Blend. And remember to let him only have one or two small pieces of cake.
By the way they make a really good low sugar cake mix and frosting that can be found at kroger or other larger grocery stores.
Q: What are some easy, diabetic friendly recipes?
My boyfriend is moving into his own apartment now that he is done with college, and he can’t cook. My dad was just diagnosed with diabetes type 2. It took all we had to convince him just to take the medication prescribed, so I would like to get as much information and recipes sent to him by mail, since he doesn’t use email.
A: The single best thing you can do for him is educate him on the disease. It doesn’t have to be a miserable death sentence. In fact, I’ve turned mine around and made it my goal to live as long and healthy as I can. Here are two links that I hope you’ll check out.
